Frozen Yogurt Covered Blueberries

March 7, 2018

Image and adapted recipe from Peanut Butter and Peppers

As the weather gets warmer outside, the lines at the local ice cream shops will be getting longer and longer. Why wait for a few scoops when you can make a sweet, delicious and healthy treat at home!

We love the idea of these frozen yogurt covered blueberries. You’ll be getting a good dose of protein from the Greek Yogurt and a healthy shot of antioxidant power from the blueberries.

FROZEN YOGURT COVERED BLUEBERRIES

Ingredients
  • 1 pint blueberries
  • 6 oz container of plain greek yogurt
  • 1/2 tsp vanilla extract
  • 1 toothpick
Instructions
  1. Line a baking sheet or plate with parchment paper, set aside.
  2. Poke the toothpick in the blueberry and swirl in the yogurt until covered. Place the yogurt covered blueberry on the prepared baking sheet. Do the same with remaining blueberries.
  3. Place the baking sheet of blueberries in the freezer and freeze for one hour. Place the blueberries in a freezer safe container.
